Pandesal/Rolls

Ingredients:
6 cups     all-purpose flour
1 tbsp.     salt
1 cup       sugar
1 tsp.       baking powder
2 tbsp.     ActiveDry Yeast
1 ¾ cup   milk (evaporated milk is an option)
1 tsp.       sugar (from 1 cup)
1 tsp.       vanilla
2 pcs.      eggs
3/4 cup    unsalted butter (soften/room temperature)
2 tsp.       honey (optional)

Instructions:
Warm milk for 1 min in the microwave. Add 1 tsp. sugar and yeast. Let the yeast activate for 5-10 mins. You will see bubbles when ready. Set aside.

Combine all dry ingredients; flour, salt, sugar and baking powder in a separate bowl. Set aside.

In the bowl of stand mixer, combine the activated yeast, vanilla, eggs, butter and honey. Using the dough hook, turn the mixer to slow speed. Slowly add the flour mixture by ½ cup. Once the dough starts to incorporate into the dough, increase the speed to medium until the dough pulls away from the side of the bowl. Dough should be slightly sticky and soft. Add more or less flour until you reach the dough consistency.

Form the dough into ball shape and transfer to a bowl slightly with flour. Cover with plastic/towel and let rise for 90 mins.

Lightly grease a baking sheet or use silicone baking mat. Cut the dough in half. Form the dough into a log rectangle shape 2-inch width and then cut diagonally in 1-inch interval. You can also form 24 small ball roll shape. Place in a baking sheet, cover with plastic/towel and let rest for an hour.

Pre-heat the oven for 400 F and cook for 16 mins. This varies depends on your over.

Serve warm or cool, let rest and cooled down completely before storing in a plastic bag or container.
